Ingredients
2 generous tbsp butter – or olive oil if you’re taking a vegan route
Couple of handfuls pine mushrooms, sliced
Handful of chopped herbs such as parsley, chives, dill or even fennel fronds
A couple of sprigs of fresh thyme
Salt, pep
Splash extra virgin olive oil
Parmesan or pecorino shavings, optional

Pine mushrooms have a fleeting season (that’s why we all get so excited about them!), but rest assured this recipe can we be used with any kind of mushroom. A handful of herbs and dollop of butter/olive oil is everything you need.
Simple Sautéed Pine Mushrooms
Heat a frypan, add butter and a splash of olive oil, add mushrooms and cook for a few minutes. Add herbs, season and cook for a couple more minutes.
Serve mushrooms, drizzle over a little olive oil, top with cheese if using.
This is a delicious side dish for a breakfast spread, we topped silky scrambled eggs with them!
