1 cup rolled oats
1 cup plain flour
1 cup sugar
3/4 cup coconut
125g butter
2 tbsp golden syrup
½ tsp bicarbonate of soda
1 tbsp boiling water

Summary

Anzacs are a classic treat and super easy to whip up – a great little bickie to have in the repertoire. And these are CWA-sanctioned no less, so they’re the real deal. We have a few yummy biscuit recipes in our growing collection, but it didn’t seem quite right without these to dunk in your cup of tea.

ANZAC biscuits 

Makes about 35
Preheat the oven to a low 150ºC
Combine the oats, sifted flour, sugar and coconut.
Combine the butter and golden syrup, stirring over gentle heat until melted.
Mix bicarb soda with boiling water, add to melted butter mixture, then stir into dry ingredients.
Take teaspoonfuls of mixture and place on lightly greased oven trays with plenty of room for spreading.
Bake for 20 minutes.
Loosen while still warm, then cool on trays.

  2. These ANZACs were always a lasting favourites of my dad’s and I made them for him often. He, also, loved ginger and I made a variation to the recipe() about 20 years ago and added 90gms of diced crystallised ginger to the recipe. A desecration, perhaps, but the biscuit is a taste sensation and has become an all time favourite of my children’s, too.
    Forgive CWA but a half batch of ginger and plain is a welcome culinary delight. Half batch, 50gms of diced ginger.
