Instructions
Make the Cannellini Dip:
Drain and rinse the cannellini beans, then add them to a blender or food processor.
Add lemon juice, a generous drizzle of olive oil, salt, pepper, and chilli flakes. Blend until smooth.
If needed, add extra olive oil or a few teaspoons of water to achieve your desired creamy consistency. Set aside.
Prepare the Bread:
Heat a pan over medium heat and drizzle with olive oil.
Add the bread slices and sprinkle with a pinch of salt.
Fry until golden and crispy on both sides. Remove and let cool slightly.
Slice the Tomatoes:
Cut the tomatoes into slices about 0.5cm thick. Set aside.
Assemble the Canapés:
On each piece of crispy bread, spread a layer of the cannellini dip.
Top with a slice of tomato.
Finish with a sardine on top.
