2x tomatoes
1x egg for brushing (scramble remainder and consume on toast)
1x Blue Bay Fetta 250g

Instructions

Preheat the oven to 190°C and allow 4 pastry sheets to defrost.

Dice the tomatoes, season with salt and pepper, and set aside.

Once the pastry has thawed, wash and dry the spinach leaves thoroughly, then spread them evenly over the pastry sheets.

Sprinkle the diced tomatoes over the spinach, crumble the feta on top, and dollop the basil pesto evenly across the surface.

Roll the pastry tightly, then chill in the fridge for 15-30 minutes to firm up.

Slice the rolls into 1-2cm pieces, place them on a lined baking sheet, and brush with egg wash.

Bake for 25-35 minutes, or until golden and crisp, adjusting time as needed based on your oven and scroll size.

Enjoy warm or at room temperature!
